Ingredients

  • Half recipe:
  • 8 cups flour - 1 cup KA AP flour = 4 1/4 oz/ 8 cups = 34 oz = 2 lbs + 2 oz
  • 8 teaspoons baking powder
  • 6 eggs
  • 1 1/2 cups sugar
  • 1 cup milk
  • 1 cup shortening
  • 4 1/2 tablespoons lemon extract -plain cookie could use more flavor but fine w icing
  • added: 1/8 tsp salt
  • opt: sprinkles or coarse sugar

  • Note: KA: 1 cup AP flour = 4 1/4 oz = 120 gms
  • granulated sugar 1 cup = 7 oz = 198 gms

  • Icing: Note: to dip cookies fully use 1 1/2 x icing-
  • 16 ounces confectioners sugar
  • 4 1/2 tablespoons lemon extract
  • dash milk or water

  • 4 tsp baking powder
  • 3 eggs
  • 3/4 cup sugar
  • 1/2 cup milk
  • 1/2 cup shortening
  • 2 1/4 tbs lemon ext -plain cookie could use more flavor but fine w icing

  • Note: KA: 1 cup AP flour = 4 1/4 oz = 120 gms
  • granulated sugar - 1 cup = 7 oz = 198 gms
  • Icing:Note: to dip cookies fully use 1 1/2 times icing:
  • 8 oz confect sugar - 12 oz
  • 2 1/4 tbs lemon ext - 3 3/8 TBS
  • dash milk or water

Preparation

Step 1

Sift flour & baking powder

Beat eggs & sugar together; add milk, shortening & lemon extract

Combine wet & dry ingredients until smooth

Cover & refrigerate 1 hour

Roll into logs & twist into knots
Place on ungreased cookie sheet

Bake in preheated 350 degree oven 10 -12 mins until lightly golden

Mix icing ingredients together, add small amts milk or water til get proper consistency
Dip cooled cookies into icing

Optional: sprinkle with coarse sugar or candy sprinkles before icing dries
