Cheesecake - Juniors Recipe

Ingredients

  • (4) 8 oz packages regular cream cheese
  • 1 2/3 cups sugar
  • 1/4 cup cornstarch
  • 1 tablespoon vanilla extract
  • 2 extra large eggs
  • 3/4 cup heavy cream

Preparation

Step 1

Preheat oven to 350. Grease 9"springform pan.

Beat on low until creamy, about 3 minutes: 1 pkg cream cheese, 1/3 cup sugar & cornstarch. Blend in rest of cream cheese.

Increase mixer speed to high & beat in remaining 1 1/3 cups sugar, then vanilla. Add eggs 1 at a time, beating well after each.

Blend in heavy cream only until just blended-do not over mix at this point.

Spread into pan, place pan in water bath coming up 1" high on pan

Bake until center just jiggles, about 1 hour. Cool on wire rack 1 hour, then refrigerate at least 4 hours.
