Butternut Squash and Grape (Salad)

Ingredients
- 1 large head Romaine lettuce,shredded (Optional)
- 1/2 butternut squash,diced or cubed
- 1-2 cups red seedless grapes,quartered
- 1-2 small shallots,cut into rings
- 1/4 cup roasted,salted pistachios(optional)
- Dressing
- 1/4 cup canola oil
- 2 Tbs red wine vinegar
- 1 tsp sugar
- 1 tsp honey
- 1/2 tsp salt
- pinch pepper
- 1/8 tsp garlic powder

Preparation
Step 1
Preheat oven to 400. Arrange butternut squash and shallots on a lined baking sheet and bake for 20 min or until golden. Allow to cool.
Whisk dressing ingredients together. Toss salad ingredients together just before serving,and drizzle with dressing.
