Butternut Squash and Grape (Salad)

  • 1 large head Romaine lettuce,shredded (Optional)
  • 1/2 butternut squash,diced or cubed
  • 1-2 cups red seedless grapes,quartered
  • 1-2 small shallots,cut into rings
  • 1/4 cup roasted,salted pistachios(optional)
  • Dressing
  • 1/4 cup canola oil
  • 2 Tbs red wine vinegar
  • 1 tsp sugar
  • 1 tsp honey
  • 1/2 tsp salt
  • pinch pepper
  • 1/8 tsp garlic powder



Step 1

Preheat oven to 400. Arrange butternut squash and shallots on a lined baking sheet and bake for 20 min or until golden. Allow to cool.
Whisk dressing ingredients together. Toss salad ingredients together just before serving,and drizzle with dressing.
