Ingredients
- Topping:
- 1 1/4 cups flour
- 1 1/4 cups oats
- 2/3 cup sugar
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 egg
- 2 cups bananas, mashed
- 1/3 cup margarine, melted
- 1 cup cranberries, chopped
- 1/2 cup rolled oats
- 1/2 cup brown sugar, packed
- 1/4 cup flour
- 1/4 teaspoon nutmeg, ginger or cinnamon
- 1/2 cup butter
- 1/4 cup chopped nuts or coconut
Preparation
Step 1
Prepare topping & set aside
Combine 1st 6 dry ingredients, mix well
Beat egg, banana & melted margarine together, add to dry mixture.
Stir to blend
Stir in cranberries, just to mix
Topping:
Combine 1st 4, cut in butter til coarse crumbs
Optional: stir in nuts or coconut
Bake muffins at 375 for 20-25 mins
