Coconut Tofu (or Shrimp)

Ingredients

  • 1 package tofu
  • 1/2 cup cornstarch
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon pepper, black or white
  • 1/4 teaspoon cayenne pepper
  • 3 egg whites, beaten with a little water
  • 2 1/2 cups sweetened coconut, shredded, or 2 1/2 cups fresh coconut, shredded
  • canola or peanut oil
  • dipping sauce
  • 1/2 cup orange marmalade
  • 1 or 2 tbs dark rum

Preparation

Step 1

drain tofu, cut into rectangles, pat dry

combine cornstarch, salt & 2 peppers

whisk egg whites with water

plate coconut in 3rd bowl

coat each piece of tofu with cornstarch mixture, shaking off excess

dip in egg white, press into coconut

fry til golden

serve with dipping sauce:

heat marmalade in small saucepan, thin with 1 -2 tbs dark rum
