Cinnamon Buns from Breads cookbook (Sunset)

Ingredients

  • Powdered sugar glaze:
  • 2/3 cup milk, 1 3/4 cups sugar
  • 1 teaspoon salt
  • 1/2 cup butter or margarine
  • 2 packages yeast = 4 1/2 tsp
  • 1/2 cup warm water with 1 tsp sugar
  • 5 1/2 - 6 cups flour
  • 2 eggs- 1 whole, 1 separated
  • 1 teaspoon vanilla extract
  • 1/4 cup butter, melted
  • 1 tablespoon cinnamon
  • 1 cup sugar
  • raisins
  • 1 1/2 cups powdered sugar
  • 1 tablespoon butter, softened
  • 1/8 teaspoon vanilla extract
  • 2 or 3 tbs warm water

Preparation

Step 1

Scald milk, add 1/2 cup butter, 3/4 cup sugar, salt' Stir & cool to 105'

Dissolve yeast in water

Blend in milk mixture

Gradually add in 3 cups flour, beat for 5 mins

Beat in 1 whole egg & 1 egg yolk mixed with vanilla extract; add remaining 2 cups flour to make stiff dough

Knead until satiny

Let rise in oiled bowl until doubled (about 2 hours)

Knead briefly, let rest 10 mins

Roll into 24 x 18 rectangle

Combine 1 cup sugar with 1 tbs cinnamon

Brush with melted butter & sprinkle with cinnamon & sugar & raisins

Roll up jelly roll fashion, pinch seams with water to seal

Cut into 12 slices, put cut side down onto parchment lined pan

Let rise until almost doubled (about 1 1/2 hours)

Brush top surfaces with reserved egg white mbeaten with 1 tbs water

Bake at 350" for 30-35 mins til browned

Drizzle with glaze while warm or save unglazed & glaze when ready
