Turtle Terrine

To be used with brownie muffins (see recipe online) or use purchased brownies, which, of course, are not nearly as good.

Ingredients

  • Layer; Freeze:
  • 1.5 quarts vanilla ice cream, slightly softened
  • 5 or so brownie muffins
  • Serve with:
  • caramel sauce
  • toasted pecans
  • chocolate sauce

Preparation

Step 1

Lightly coat an 8 1/2 x 4 1/2 inch loaf pan with nonstick spray; line the pan with plastic wrap.

Layer: Layer the ice cream on the bottom of the loaf pan; crumble 1 1/2 muffins over the ice cream. Repeat layering of ice cream and brownie muffins, ending with muffins. Fold plastic over the terrine and freeze until solid, about 8 hours or overnight.

Unmold the terrine and peel off the plastic. To slice: dip a thin-bladed knife into hot water, wiping the blade dry between cuts. Serve a slice of the terrine with caramel and chocolate drizzled and pecans sprinkled on top.

The amount of brownies between layers of ice cream is up to you. Measurements are not exact.
