Ingredients
- for Tropical Chiffon Cake:
- 2 1/4 cups sifted cake flour
- 1 1/2 cups sugar
- 3 teaspoons baking powder
- 1 teaspoon salt
- 1/2 cup oil
- 5 egg yolks
- 3/4 cup water
- 1 teaspoon vanilla
- 2 teaspoons grated lemon peel
- 1/2 teaspoon cream of tartar
- 1 cup egg whites (about 8)
- use 3/4 cup orange juice instead of water, 1 tsp grated orange peel or 2 tsp grated lemon peel, leave out vanilla extrac
- Can fold in 1 1/3 cups flaked coconut at end
- Bake 55 mins
- Note: 1 cup cake flour = 1 cup - 2tbs all purpose flour
Preparation
Step 1
Sift 1st 4 ingred together, add next 5, beat til satin smooth
Add cream of tartar to egg whites, beat til very stiff peaks
Pour batter over egg whites in thin stream & fold in
Bake in ungreased tube pan, invert to cool
