Ingredients

  • 24 CUPS TOMATOES (Blanch tomatoes and remove skin) quartered and process in food processor until saucy

  • BLEND IN BLENDER THE 2 FOLLOWING ITEMS AND ADD SOME OF THE ABOVE TOMATOES
  • 1 CUP & 2 TBSP. VEGETABLE OIL
  • 6 SMALL TOMATO PASTE 6 OZ CANS
  • _______________________________________________________________
  • 6 CUPS DICES ONIONS
  • 3 CUPS GREEN PEPPERS
  • 6 TBSP BASIL
  • 6 TBSP OREGENO
  • 6 CLOVES OF GARLIC
  • 5 TBSP SALT
  • 2 1/2 TBSP PEPPER
  • 3/4 CUP BROWN SUGAR
  • 6 BAY LEAVES

Preparation

Step 1

COOK AT LEAST 1 1/2 HOURS TO 2 HOURS THE MORE YOU COOK IT THE THICKER IT WILL GET.

PUT IN STERLIZED QUART JARS 1/2" HEAD SPACE.
PUT THE LIDS AND BANDS
PROCESS 20 MINUTES IN BOILING WATER
