Ingredients
- 1 pound chicken breasts, cut into 1 inch cubes
- 3 tablespoons flour
- 1 tablespoon curry powder
- 1 teaspoon garlic salt
- 3 tablespoons vegetable oil
- 1 1/2 cups apple, peeled, cored and chopped
- 1 cup red onion
- 2 tablespoons brown sugar
- 1 teaspoon garam masala
- 1 can coconut milk
Preparation
Step 1
Mix flour, red curry powder and garlic salt in a ziploc bag. Place chopped chicken pieces in the bag; toss to coat well.
Heat oil in large nonstick skillet on medium-high heat. Add chicken; cook and stir 5 minutes or until well browned. Reduce heat to low. Add apple and onion; cook and stir 2 to 3 minutes.
Stir in brown sugar, garam masala and coconut milk. Simmer, covered, 10 minutes, stirring occasionally. Serve over rice with chopped bananas and peanuts.
