Ingredients
- 2 plum tomatoes
- 1/2 small seedless cucumber
- 1/2 small red onion
- 1 small yellow summer squash
- 4 c. torn romaine lettuce
- 1/2 c. crumbled feta
- 1/4 c. sliced pitted olive
- 1/2 c. greek vinagrette dressing
Preparation
Step 1
Slice tomatoes, cucumber, onion and squash.
Arrange lettuce on serving plate. Arrange tomatoes, cucumber and squash over lettuce in an overlapping circular pattern. Top with onion, cheese and olives. Drizzle with dressing and serve immediately.
