Cranberry Apple Baked Pancake

Ingredients

  • 2 Tbsp. Butter
  • 1/4 cup dried cranberries
  • 1 small apple, peeled cored and chopped
  • 1/4 cup packed brown sugar
  • 1 tsp. finely shredded orange peel (set aside)
  • 1/4 cup OJ
  • 3/4 cup all-purpose flour
  • 4 tsp. granulated sugar
  • 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/8 tsp. salt
  • 1 egg, beaten
  • 1/2 cup buttermilk
  • 4 tsp. cooking oil

Preparation

Step 1

1. Preheat oven to 350. Place butter in a 9 inch pie plate. Place pie plate in preheated oven just until butter is melted. Remove from oven; add cranberries and apple.

2. Meanwhile, in a small saucepan combine brown sugar and orange juice. Bring to boil; reduce heat to medium. Boil gently, uncovered, for 5 minutes. Pour atop cranberries and apple in pie plate.

3. In a medium mixing bowl stir together flour, sugar, baking powder, baking soda, and salt; set aside. In another mixing bowl combine egg, buttermilk, oil, and orange peel. Add egg mixture all at once to flour. Stir just until mixed. Pour batter evenly atop mixture in pie plate.

4. Bake in a 350 oven about 15 minutes or until top springs back when lightly touched. Cool in pie late for 5 minutes. Carefully invert pancake onto a serving platter. cut in wedges and serve warm. Makes 4 servings.
