Ingredients
- Cream Cheese Frosting:
- 2 c all-purpose flour
- 1 c sugar
- 1 t baking powder
- 1 t baking soda
- 3/4 t salt
- 1 1/2 t gr cinnamon
- 2 c shredded peeled sweet potato (1 large)
- 3/4 c vegetable oil
- 1 t vanilla
- 3 eggs
- 1 can (8oz) crushed pineapple in juice, undrained
- 3/4 c sweetened dried cranberries
- 1/2 c butter softened
- 1 package (8oz) cream cheese, softened
- 3 c powdered sugar
- 1 t vanilla
Preparation
Step 1
1. Heat oven to 350F. Grease bottoms and sides of 2 round pans, 9 x 1 1/2 in, with shortening; lightly flour.
2. In a large bowl, mix dry ingredients. Add sweet potato and other wet ingredients. Beat w/electric mixer on a medium speed 2 min. Stir in cranberries. Pour into pans.
3. Bake 25-35 min or until a toothpick inserted in center comes out clean. Cool 5 min; remove from pans to wire rack. Cool completely, about 1 hour.
4. In a medium bowl, beat all cream cheese frosting ingredients w/electric mixer on medium speed until smooth. Fill layers and frost side and top of cake. Garnish edge with additional dried cranberries if desired.
