Ingredients

  • 1 recipe pastry for a 9 inch double crust pie
  • 1/2 cup unsalted butter
  • 3 tablespoons all-purpose flour
  • 1/4 cup water minus 1 T
  • 1/2 cup white sugar
  • 1/2 cup packed brown sugar
  • 8 Granny Smith apples - peeled, cored and sliced thin
  • 1 t cinnamon
  • 1/2 t nutmeg
  • 1/2 t vanilla
  • 1 T cornstarch

Preparation

Step 1

Preheat oven to 425 degrees F (220 degrees C). Melt the butter in a saucepan. Stir in flour to form a paste. Add all ingredients EXCEPT apples, and bring to a boil. Reduce temperature and let simmer.
Place the bottom crust in your pan. Stir apples into hot mixture (save enough to brush on top crust before baking), pour into bottom crust mounded slightly. Cover with a second crust making slits in top crust or a lattice work crust. Place on a foil lined pan to catch any bubble over.
Bake 15 minutes in the preheated oven. Reduce the temperature to 350 degrees F (175 degrees C). Continue baking for 35 to 45 minutes, until apples are soft. I usually cover pie after fifteen minutes with foil, tearing it open in middle and pulling it back, leaving the edge of the crust covered to prevent it from over baking or burning.
