Champagne Vanilla Zabaglione with Fruit

Ingredients
- 6 egg yolks
- 1 c sugar
- 1 vanilla bean, cut in half lengthwise
- 1 3/4 c champagne
- 1 cup each fresh blueberries, raspberries and sliced strawberries
- 2 ripe bananas, sliced

Step 1
Whisk together egg yolks and sugar in top of a double boiler.
Scrape vanilla beans seeds into egg mix, and add beans halves.
Whisk in champagne; bring water to a boil.
Reduce heat to medium; cook, whisking constantly, 20 minutes or until thickened.
Discard vanilla bean.
Arrange berries and banana in an 11x7 baking dish or divide into 8 (8oz) custard cups.
Pour egg mix over fruit.
Broil 6 inched from heat - with oven door partially open - 1 minute or until lightly browned.
