Oven Fried Chicken with Almonds

  • 1 cup whole wheat bread crumbs
  • 1/4 cup parmesean cheese
  • 1/4 cup finely chopped almonds
  • 2 tbsp parsley
  • 1 clove garlic crushed
  • 1 tsp salt
  • 1/4 tsp thyme
  • pinch of black pepper
  • 1/4 olive oil
  • 2 lbs chicken, pounded to 1/2 thickness

Preparation

Step 1

1. Heat oven to 400
2. In medium bowl combine first 9 ingredients. Mix thoroughly
3. Place oil in shallow dish. Dip chicken in oil, then the crumb mixture. Place in shallow baking pan
4. Bake for 25 minutes
