Chocolate Mousse Parfaits

Ingredients

  • 2 large ripe avocados
  • 1/2 c raw cacao powder or unsweetened cocoa powder
  • 1/4 c agave or brown rice syrup (or more for taste)
  • 1 T vanilla extract
  • 1/4 c ground flaxseed
  • 1/4 c chopped walnuts, toasted
  • 2 dates, pitted and chopped
  • 2 T unsweetened shredded coconut
  • 1/2 t ground cinnamon
  • pinch of salt
  • fresh fruit, such as raspberries

Preparation

Step 1

1. Puree avocado, cacao powder, agave or syrup and vainlla in a food processor until silky smooth. Refrigerate in an airtight container until ready to use (up to 3 days).
2. In a clean food processor, combine flaxseed, walnuts, dates, coconut, cinnamon and salt; pulse until crumbly. Refrigerate in an airtight container until ready to use for up to 7 days (makes 1 c).
3. Layer 1 T mousse at the bottom of each parfait glass. Layer in fresh fruit and sprinkle w/1 T coconut mixture. Divide remaining mousse among glasses; top w/more fresh fruit and 1 T coconut mixture.
