SALSA****Cucumber Pineapple Salsa

Ingredients

  • 1 clove garlic, minced
  • 1/2 teaspoon fresh minced ginger
  • 2 tablespoons chopped scallions
  • 1 tablespoon finely minced red onion
  • 1/2 cup chopped cucumber
  • 1/2 cup chopped fresh pineapple
  • 2 tablespoons finely minced red pepper
  • 1 tablespoon extra-virgin olive oil
  • 2 tablespoons fresh lime juice
  • 1 tablespoon fresh chopped cilantro or basil leaves
  • 1 tablespoon fresh chopped mint leaves
  • 1/2 medium jalapeno, finely minced, or 2 - 3 dashes chipotle Tabsco sauce
  • Pinch salt
  • Pinch freshly ground black pepper

Preparation

Step 1

* In a medium bowl add all ingredients except cucumber and combine well. Just before serving, gently stir in cucumber. Consider not adding cucumber until serving time or it looses its crunch.

* Remove from fridge when pre-heating grill.
