Southwestern Chicken Soup (2)

Ingredients

  • 1 tsp. olive oil
  • 1/2 cup chopped onion
  • 2 tsp. minced garlic
  • 2 cups chopped, cooked chicken breast
  • 1 (16 oz.) can pinto beans, rinsed and drained
  • 1 (14.5 oz.) can diced tomatoes, undrained
  • 1 (14 oz) can fat free chicken broth
  • 1 (8-3/4 oz.) can whole kernel corn, undrained
  • 1 (4.5 oz.) can chopped green chilies, undrained
  • 1/2 tsp. chili powder
  • 1/2 tsp. ground cumin
  • 6 tbsp. fat free sour cream

Preparation

Step 1

Heat oil in a Dutch oven over medium high heat. Add onion and garlic. Saute 2 - 3 minutes. Add chicken and next 7 ingredients. Bring to a boil. Reduce heat nd simmer 15 minutes. Ladle soup into bowls and top with sour cream.
