pck (16ounces) light extra firm tofu
cup reduced sodium soy sauce, reduced fat peanut butter, honey, lemon juice, and bead or unsulphured molasses.
tbs finely chopped gingerroot
finely chopped serrano, or jalapeno chili
cloves garlic, minced
tsp chili powder
tbs dark asian sesame oil
Press tofu to remove excess moisture. Cut tofu into 3/4 inch cubes and arrange on 6 skewers. Place in single layer in baking dish. Process remaining ingredients in food processor or blender until smooth. Pour over tofu kabobs and refrigerate, covered 1 hour, drain, reserving marinade. Bake tofu kabobs at 400 degrees for 20 minutes. Serve marinade with kabobs.
