Pork Tenderloin with Apples and Bacon (Slow Cooker)

Ingredients

  • 4 slices of bacon
  • 2 (3/4 lb.) pork tenderloins
  • 2 medium-sized sweet onions, sliced
  • 2 Braeburn apples, cored and cut into eighths
  • 1 tablespoon dark brown sugar
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 tablespoons apple jelly (optional)
  • 1/2 cup chicken broth
  • 1/4 cup apple cider vinegar

Preparation

Step 1

Cook bacon until crisp; remove and drain on paper towels, reserving 1 tablespoon drippings in skillet. Crumble bacon, and set aside. Brown pork in hot drippings 7 minutes or until browned.

Combine bacon, onions and next 4 ingredients in a lightly greased 5-quart slow cooker. Place pork over apples and onions; pour broth and vinegar over pork.

Cook on LOW 6 hours or until pork is tender.

NOTE: You can use Empire, McIntosh or Rome apples for similar taste.
