Ingredients
- 1 onion, finely chopped
- 1 inch ginger, grated
- 2 tsp crushed garlic
- 2 tbsp mild curry powder
- 1 pinch turmeric
- 1 lb 8 oz / 681 g boneless skinless chicken thighs, cubed
- 400 g can chopped tomatoes
- 18 fl oz / 511 ml chicken stock
- 5 oz / 142 g green beans, trimmed and halved
- 2 medium carrots, peeled and cut into bite sized pieces
- 2 red peppers, deseeded and cubed
- 1 pinch sweetener
- 7 oz / 198 g non-fat fromage frais or natural yogurt
- Boiled rice, to serve

Preparation
Step 1
Place all ingredients except fromage frais and rice in slow cooker on low heat for 8 hours. Prior to serving, add fromage frais. Serve with rice. Garnish with fresh coriander if you like.
