Ingredients

  • 1

    onion, finely chopped

  • 1

    inch ginger, grated

  • 2

    tsp crushed garlic

  • 2

    tbsp mild curry powder

  • 1

    pinch turmeric

  • 1

    lb 8 oz / 681 g boneless skinless chicken thighs, cubed

  • 400 g can chopped tomatoes

  • 18

    fl oz / 511 ml chicken stock

  • 5

    oz / 142 g green beans, trimmed and halved

  • 2

    medium carrots, peeled and cut into bite sized pieces

  • 2

    red peppers, deseeded and cubed

  • 1

    pinch sweetener

  • 7

    oz / 198 g non-fat fromage frais or natural yogurt

  • Boiled rice, to serve

Directions

Place all ingredients except fromage frais and rice in slow cooker on low heat for 8 hours. Prior to serving, add fromage frais. Serve with rice. Garnish with fresh coriander if you like.
