Ingredients

  • 1/2 cup pecans
  • 1/4 c butter
  • 4 chicken cutlets
  • 1 tsp salt
  • 1/2 tsp pepper
  • 3 TBSP A.P.flour
  • 3 TBSP olive oil
  • 1/2 c chicken broth
  • 1 TBSP brown sugar
  • 2 TBSP cider vinegar
  • 1/2 tsp dried thyme

Step 1

Heat pecans with butter in large nonstick pan, stirring often until toasted and fragrant . Remove. Sprinkle chicken with salt and pepper, dredge in flour, shaking off excess. Cook chicken in hot oil over med heat 3-4 minutes on each side till golden brown and done. Transfer to serving dish, top with pecans. Add broth to skillet and cook 2 minutes, stirring to loosen particles from bottom of pan. Add brown sugar, vinegar and thyme. Cook 3-4 min till sugar is melted and sauce is lightly thickened. Whisk in remaining 2 TBSP butter. Serve sauce over chicken.
