Potato Bread

Ingredients
- 5 c mashed potatoes, warmed slightly
- 1 to 1 1/2 c flour
- 1/2 c butter, at room temperature
- Salt

Preheat oven to lowest setting. In bowl, combine potatoes with 3/4 c flour and 1/4 c butter. Use your hands or a spoon to blend ingredients.
While mixture is still a little sticky, turn it out onto liightly floured surface. Add 1/2 c flour and using hands, work it into mixture. When it is no longer sticky and dough has formed, kneed lightly a few times. Use a little more of remaining flout to dust work surface, then roll out dough to about 1/2" thickness (divide dough in half or thirds if too large for work surface). Cut dough into small circles, squares or triangles.
Heat griddle over medium-low heat, add a little of remaining butter. Fry pieces in batches turning once or twice, until golden brown on both sides - 2 - 3 minutes per side. Repeat with remaining dough, adding more butter a necessary..
