Tupperware Sticky Date Pudding with Butterscotch Sauce

Ingredients

  • 300g pitted dates
  • 1 tspn bicarb soda
  • 3/4 cup boiling water
  • 100g softened butter
  • 3/4 cup brown sugar
  • 1/4 cup castor sugar
  • 2 x 70g eggs
  • 1 medium apple
  • 1 cup S.R.Flour
  • 1/2 tspn cinnamon
  • icing sugar and thickened cream to serve
  • Butterscotch Sauce
  • 3/4 cup brown sugar
  • 40g butter
  • 200mls cream
  • 1 tblspn whisky (optional)

Preparation

Step 1

Snip dates into small pieces and place in 1 litre Tupperwave Jug. Add the bicarb soda and boiling water, stir well and set aside to cool.
Place butter and sugars into Bake 2 Basics Small bowl and cream using electric beaters until light and fluffy. Transfer mixture to B2B Mix-N-Pour and beat in eggs one at a time.
Peel apple and coarsely grate. Fold apple into the butter mixture along with the flour, dates and cinnamon.
Pour into the base of the TupperWave Stack Cooker and microwave uncovered on Medium High (650watts) [me:use medium] for 6-7 minutes.
Meanwhile, sauce - place sugar, butter, cream and whisky into top layer of stack cooker, stir to combine, stack on top of the pudding and microwave uncovered on Medium High (350watts) [me:use medium} for 6 minutes.
Remove pudding from oven, cover and stand for 5 minutes. Return sauce to microwave and cook uncovered on High (800watts) [me:Med High] for 3 minutes.
Serve: Dust pudding with icing sugar. Place a large scoop of pudding in a serving dish, drizzle with sauce and serve with a large dollop of cream.
