Ingredients
- 4 cups low sodium chicken broth
- 2 cups cooked chicken, cubed (white or dark)
- 1 - 10oz. can Cream of Chicken Soup
- 1 cup green enchilada sauce
- 1/2 cup stewed tomatoes, finely diced
- 1/2 cup sour cream
- 1/4 cup green pepper, finely diced
- 1/4 cup onion, chopped
- 4 Tablespoons all-purpose flour
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon onion powder
- 1/8 teaspoon cayenne pepper
- 4 oz. shredded Monterrey Jack or cheddar cheese
- Cilantro for garnish

Step 1
Combine broth, cream of chicken soup, enchilada sauce, tomatoes, pepper, onion, and spices in saucepan; bring to a boil. Stir in flour, reduce heat. Add chicken and sour cream. Serve with shredded cheese, garnish with cilantro.
