  • 4 cups low sodium chicken broth
  • 2 cups cooked chicken, cubed (white or dark)
  • 1 - 10oz. can Cream of Chicken Soup
  • 1 cup green enchilada sauce
  • 1/2 cup stewed tomatoes, finely diced
  • 1/2 cup sour cream
  • 1/4 cup green pepper, finely diced
  • 1/4 cup onion, chopped
  • 4 Tablespoons all-purpose flour
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon onion powder
  • 1/8 teaspoon cayenne pepper
  • 4 oz. shredded Monterrey Jack or cheddar cheese
  • Cilantro for garnish

Step 1

Combine broth, cream of chicken soup, enchilada sauce, tomatoes, pepper, onion, and spices in saucepan; bring to a boil. Stir in flour, reduce heat. Add chicken and sour cream. Serve with shredded cheese, garnish with cilantro.
