Stuffed Zuchinni

Ingredients

  • 6 med. zuchinni (1 1/2 lbs.)
  • 1/4 cup butter
  • 1 clove garlic split
  • 1 med onion
  • 1 cup fresh tomato (skin removed)
  • 1 cup cooked rice
  • 1/2 teasp. ortegano
  • 1 teasp. salt
  • 1/2 teasp. cayenne
  • 1/2 cup parmesan cheese

Preparation

Step 1

Wash zuchinni, cut off ends, cut each in half crosswise.k

Cook zuchinni in small amount of boiling water salted for 5 mins. Cool and scoop out seeds

Saute garlic in butter until golden, then remove garlic and add onion.

Saute, then add tomato , rice oregano, salt and cayenne. Toss with fork.

Preheat oven to 4oo degrees.

Sprinkle inside of zuchinni with salt and fill with rice mixture. Sprinkle with cheese

Bake uncovered for 15 mins.
