Red Snapper with Tomato Basil Chipotle Cream Sauce

Ingredients

  • 2 pounds Red Snapper fillet
  • 2 tablespoons CM Tomato Basil Chipotle rub
  • Olive oil
  • 1 tablespoon minced garlic
  • 1/2 cup dry white wine
  • 1/4 cup heavy cream
  • 1/4 pound bay shrimp
  • Salt and pepper, to taste

Preparation

Step 1

Cover snapper with olive oil, season with rub. Place on a baking sheet in a 425°F oven for 12 minutes.

Meanwhile warm olive oil in a large skillet, add garlic. Sauté for 1 minute, add wine and reduce to ½ over medium-high heat, about 8 minutes. Add shrimp and cream and sauté 5-6 minutes to allow thickening.

Pour over snapper and serve warm.
