Ingredients
- 1 tbsp. olive oil
- 1-1/2 cups chopped onion
- 1 tsp. ground cumin
- 1 tsp. chili powder
- 1 (14 oz.) can fat free chicken broth
- 2 (15.8 oz.)cans Great Northern beans, rinsed and drained
- 1/4 tsp. freshly ground black pepper
- 2 cups chopped cooed chicken breast
Preparation
Step 1
Heat oil in a dutch oven over medium high heat. Add onions and saute 4 minutes or until tender. Stir in cumin and chili powder. Saute 1 minute. Stir in chicken broth and 1 cup beans. Mash remaining beans with a potato masher. Add to soup. Stir in pepper. Bring to a boil. Stir in chicken. Cook 1 minute or until thoroughly heated. Divide mixture evenly among 4 bowls (about 1-1/2 cups).
