Lemon and Thyme Vinaigrette

  • Grated zest and juice from 1/2 lemon
  • 1/2 cup extra-virgin olive oil
  • 1/4 cup white wine vinegar
  • 1 1/2 tsp. fresh thyme leaves
  • Sea salt and ground pepper

In a small bowl, whisk together lemon zest and juice, olive oil, vinegar and thyme. Season to taste with salt and pepper.
