Ingredients
- 9 egg whites
- 1-1/2 cups sugar
- 6 sticks butter
- 8 oz white chocolate

Step 1
In the bowl of a double boiler, or a bowl set ontop of a saucepan of simmering water, whisk the egg whites and the sugar till very runny and warm. Do not cook the eggs. Place them into the bowl of a stand mixer and beat on high 5 minutes. Turn down to low and continue beating till cool ( about 15 minutes). Now add the butter in small bits. It should be soft, but still cool. It may begin to look like a curdled mess, but do not loose faith. When it is a frostinglike consistency, add the melted and cooled white chocolate.
