Cornhusker Roast Turkey Breast

Ingredients

  • 3 cups cornbread stuffing mix
  • 1/2 cup diced ham
  • 1/2 cup chopped onion
  • 5 tbsp melted butter
  • 1 8.5 oz can creamed corn
  • salt
  • pepper
  • 1 4-7lb turkey breast
  • 1 1/2 tsp poultry seasoning

Preparation

Step 1

-preheat oven to 350 degrees
-in lg bowl,combine stuffing mix,ham, onion,3 tbsp butter,corn,salt and pepper
-working from neck end of breast,gently seperate skin from meat to from a pocket. Pat the stuffing mixture under the skin. Rub skin w/ remaining butter and season w/ salt, pepper and poultry seasoning
-place breast on rack on roasting pan
-roast 1 1/4 to 1 3/4 hrs until thermometer registers 170 degrees
-remove from oven,loosely foil, and let stand for 10 mins
-remove stuffing before slicing
