Tangy Mustard Sauce

This sauce will add zest to any plain meat or vegetables.

Ingredients

  • 2 tbsp. Dijon mustard
  • 3 egg yolks 1 tbsp. cold water
  • 3 tbsp. lemon juice
  • 8 tbsp. butter, chilled and diced
  • Salt
  • Pepper

Preparation

Step 1

Place all ingredients, except butter, in a heatproof bowl or double boiler. Whisk together and place bowl over large pan containing simmering water. Add butter and beat until sauce thickens. Adjust seasoning and serve hot or cold.
