fresh tomato sauce

  • 2 lbs. very ripe tomatoes
  • 2 cloves garlic
  • 3 Tbl olive oil
  • 1 tsp salt
  • 10 basil leaves



Step 1

Core and halve tomatoes. Remove seeds and cut tomatoes into 1/2 inch dice. Thinly slice galic. In a 12 inch frying pan over LOW heat, cook garlic in oile oil until soft, about 5 minutes. Add the tomatoes and salt and increase heat to medium high. Cook until tomatoes start to bubble. Reduce heat to low and gently simmer. Cook uncovered for about 30 minutes. Meanwhile chop basil and add at the end.
