Chipotle Tomato Soup with cheese

Ingredients
- 1 T olive oil, divided
- 1 small yellow onion
- 2 15 oz cans dice tomatoes
- 2 T tomato paste
- pinch of baking soda
- 1/8-1/4 chipotle
- 1 1/2 c 2 % milk
- 4 pieces thinly sliced pieces of whole wheat bread
- 2 lg cloves of garlic, pressed
- 2 oz swiss style cheese

Preparation
Step 1
1. In a medium pot, heat 1/2 T olive oil and saute onion for 3-5 minutes, until tender
. Stir in tomatoes , tomato paste, baking soda and chipotle powder. Bring to a boil, reduce heat, and cook, partly covered, for 20 minutes.
2. Transfer to a food processer and puree until very smooth. Return to pot, stir in milk and warm through on low heat. Season to taste.
3. While soup is warming, arrange bread slices on a baking sheet. Ina small bowl, combine remaining 1/2 T olive oil and garlic. Spread over each bread slice sprinkle with cheese and broil utnil bubbly. Halve each piece . Serve with soup.
