Artichoke Dip

Ingredients

  • 1 can Artichokes
  • 4 oz. chopped Roasted red pepper
  • 1 Cup freshly grated Parmesan cheese
  • 3/4 Cup Mayonnaise (I use Light mayo)
  • 1/4 tsp. Garlic Powder
  • 1 Cup chopped shrimp (optional)

Preparation

Step 1

Preheat oven to 350. Drain artichokes well and chop. Combine artichokes with remaining ingredients. Place in 1/2 quart casserole. Bake for 30' till golden brown. It can be prepared day before and refrigerated. Serve hot on crackers or party rye.
