- 2 lb. red skin potatoes peeled and sliced 1/4 inch thick

Step 1
After you slice potatoes put them in salt water and soak over night. Blot them dry. Then start with the circles. Also the cooking over medium heat until sizzling takes 4 yo 5 minutes.
Heat oven to 425.
Brush pan with butter. Place 1 potato slice in the center of the pan and cover in a circular pattern slightly overlapping each row.Brush each row with butter, salt and pepper. Set pan over medium heat , and cook until potatoes sizzle on stove. Baked covered for 30 minutes. Shake pan to loosen and invert potato cake onto a large round platter. cut in wedges.
