Ingredients

  • 1 pound lean ground beef
  • 1 large onion, cut into thin wedges
  • 1 green or red bell pepper, cored, cleaned, and cut lengthwise into thin strips
  • 1 cup mild salsa
  • 2 teaspoons chili powder
  • 8 (8-inch) flour tortillas

Preparation

Step 1

Preheat the grill to medium-high heat.

In large cast iron or other heat-resistant skillet, on grill, brown ground beef, onion, and pepper for 8 to 10 minutes, or until beef is no longer pink, stirring occasionally; pour off drippings. Stir in salsa and chili powder. Reduce heat to low or raise grill rack. Cook 5 more minutes, stirring occasionally.

Serve in tortillas.

Notes:
Serve these with choice of toppings, anything from chopped tomatoes and onions to sour cream, shredded Cheddar cheese, and more salsa.
