Ingredients
- 1 cup butter or butter flavor shortening
- 1/2 cup splenda blend or 1 cup sugar
- 1 egg
- 1 tsp vanilla
- 1 cup canned pumpkin
- 2 cup flour
- 1 tsp baking soda
- 1 tsp salt
- 1 tsp cinnamon
- 1 (3.5) oz vanilla pudding mix

Step 1
Preheat oven to 350 degrees. Grease cookie sheet. Cream butter and sugar. Beat in egg, vanilla, and pumpkin. Combine flour, baking soda, salt, cinnamon, and pudding mix. Gradually stir in mix. Roll into walnut size balls and place 2 inches apart. Bake 12-15 minutes.
