Penne with Vodka Sauce

Ingredients
- 1 lb. penne
- 1/4 cup extra virgin oil
- 4 plump fresh garlic cloves, minced
- 1/2 tsp. crushed red pepper flakes
- 1 (28 oz) can crushed tomatoes
- 2 tblsp vodka
- 1 cup heavy cream
- 1/4 cup fresh flat leaf parsley
- Sea salt

Step 1
In an unheated skillet large enough to hold the pasta later on, combine the oil, garlic, crushed red pepper, and a pinch of salt, stirring to coat with the oil. Cook over moderate heat just until the garlic turns golden but does not brown, 2 to 3 minutes.
Add crushed tomatoes and stir to blend. Simmer uncovered until the sauce thickens, about 15 minutes. Taste for seasoning.
Cook penne according to package directions and drain.
Add pasta to sauce and toss. Add the vodka and toss again. Add cream and toss. Cover, reduce heat to low and let rest for one to tewo minutes to allow pasta to absorb sauce. Plate and garnish with fresh parsley. Traditionally grated cheese is not served with this dish.
