Ingredients
- 4 chicken breasts
- 2 cups quinoa
- 4 cups chicken stock
- 1 apple
- 1/3 cup sunflower seeds
- 1/3 cup dried cranberries
- 1/4 cup goat cheese
Preparation
Step 1
1. Season chicken with salt and pepper and grill on BBQ
2. Bring chicken stock to boil, add quinoa, stir and cover. Reduce heat to simmer and cook until liquid is absorbed. Remove from heat and let sit in covered pot for 10 mins.
3. Toss all ingredients in a large mixing bowl.
