Cole Slaw with Balsamic Vinaigrette

Ingredients

  • For the salad:
  • 4 cups cabbage, sliced (1 cup per person)
  • 2 cups shredded carrots
  • For the Dressing:
  • 4 Tbs. balsamic vinegar
  • 2 Tbs. red wine vinegar
  • 1 Tbs. Dijon mustard
  • 2 tsp. light brown sugar
  • 2 garlic cloves, minced
  • 2 tsp. poppy seeds
  • 1/2 cup extra virgin olive oil
  • Salt & pepper to taste

Preparation

Step 1

1. Assemble the cabbage and shredded carrots in a large bowl.

2. In a small bowl, mix together the first 6 ingredients of the dressing. Slowly add the olive oil, while whisking vigorously to create an emulsion.

Season with salt and pepper to taste.
