Miso Snack Mix

This sweet-savory snack is a good match for a cold, crisp sake. You can find shichimi togarashi at Asian markets, or buy See Smell Taste's blend online at le-sanctuaire.com.

Ingredients
- For the Miso Sauce:
- 1/4 cup sake
- 1/4 cup mirin
- 6 tablespoons white miso paste
- 1/3 cup granulated sugar
- For the Snack Mix:
- 4 cups Crispix cereal
- 2 cups toasted cashew nuts
- 2 cups Japanese rice crackers broken into bite-size pieces
- 1/2 teaspoon shichimi togarashi
- 1/2 teaspoon salt

Make Miso Sauce:
In a small sauce pan over high heat, bring sake and mirin to a boil. Whisk in miso until dissolved. Add sugar, reduce heat to medium and whisk just until sugar is dissolved. Remove from heat and let cool. (Miso sauce will keep up to a few days in the refrigerator.)
Make Snack Mix:
Preheat oven to 250 degrees. In a large, deep bowl, toss dry snack mix ingredients together. Pour 3 tablespoons miso sauce into a deep bowl, then add dry ingredients and drizzle 3 more tablespoons miso sauce over top. Combine immediately so dry ingredients are evenly coated. (Snack mix should be very lightly sauced and not wet or soggy.)
Spread mix out evenly over two 13-by-9-inch sheet pans lined with parchment paper or Silpat. Bake, gently stirring halfway through, until dry and lightly toasted, 30-45 minutes. Let cool before serving.
