Salmon Wrapped W/Goat Cheese & Prosciutto

Ingredients

  • 6-8 6 oz pieces of salmon
  • 16 slices of prosciutto
  • Olive oil for brushing
  • 8 oz. goat cheese
  • 4 oz. unsalted butter
  • 1 diced yellow onion
  • 2 tbsp chopped garlic
  • 4 tbsp. fresh thyme (can use rosemary or sage)
  • Kosher salt & cracked black pepper

Preparation

Step 1

Preheat oven to 450

Sauté yellow onion with garlic until soft. Mix with all other ingredients except prosciutto and chill in refrigerator for 15 mins. Spread mixture on salmon and wrap with prosciutto. Place on foiled pan and brush prosciutto with olive oil. Bake in hot oven for 10-15 mins.
