Shrimp Spread on Crostini

Ingredients

  • CROSTINI:
  • Crisco® Original No-Stick Cooking Spray
  • 24 (1/2-inch thick) French bread slices
  • Salt and pepper
  • SHRIMP SPREAD:
  • 8 ounces cooked, peeled and de-veined shrimp
  • 1 (3 oz.) package cream cheese, softened
  • 1/4 cup finely diced sweet onion
  • 2 tablespoons mayonnaise
  • 1 1/2 teaspoons lemon juice
  • 1/2 teaspoon dried dill weed
  • 1/8 teaspoon cayenne pepper
  • 1/4 teaspoon salt
  • 2 tablespoons fresh parsley, finely chopped

Preparation

Step 1

CROSTINI:

1. HEAT oven to 350ºF. Place bread slices on baking sheet. Spray both sides of each slice thoroughly with no-stick cooking spray. Sprinkle with salt and pepper. Bake 5 to 6 minutes or until lightly brown. Turn over and bake an additional 5 to 6 minutes. Remove from oven. Cool.

SHRIMP SPREAD:

1. COMBINE shrimp and cream cheese in bowl of food processor. Pulse until shrimp is roughly chopped and mixture is combined. Transfer to medium bowl. Stir in onion, mayonnaise, lemon juice, dill weed, cayenne pepper, salt and parsley.

TO SERVE:

1. ARRANGE crostini on platter. Place shrimp spread in serving bowl, placing in center of platter. Serve with a small knife for spreading.
