Peas and Ricotta Spread

Ingredients

  • 1 lb frozen peas, regular size is better than petite peas for this recipe
  • small onion, red onion or sweet
  • 8 oz ricotta
  • fresh basil, can also use mint leaves
  • red pepper flakes

Preparation

Step 1

chop the onion to about size of the peas
boil peas and onions together in salted water, then drain and allow to cool in a food processor. Process the onions and peas but not so fine that it is a complete puree
fold out into a bowl and add the ricotta
blend together and add the chopped basil (or mint) and a few red pepper flakes to taste

when completely blended, it should have a uniform light green color with a few larger pieces of peas still showing

chill until ready to use, best when spread on toasted baguette slices that have been rubbed with garlic and olive oil, or can use crackers

if pre-made, can use a golden raisin or a cranraisin, or a whole pea as a garnish on each piece/serving
