Breasts - w/ red jalapeno mustard glaze

  • 2 Tbsp. Dijon mustard
  • 2 Tbsp. lime juice
  • 1 Tbsp. honey
  • 1 medium red jalapeno, seeded and minced
  • 4 chicken breasts halves on the bone, skin removed
  • fresh pepper to taste

Preparation

Step 1

Combine the mustard, lime juice, honey and jalapeno. Place the chicken breasts on a rack in a baking pan and spread with about 1/3 of the mustard glaze.

Bake the chicken in a pre-heated 350 degree oven 15 minutes. Spread with 1/3 of the mustard mixture and continue baking 20 minutes.

Brush with the remaining mustard mixture and place the chicken under a hot broiler. Broil until lightly browned and bubbly, and the chicken tests done.
