Ingredients
- 4 eggs
- 2 cups milk
- 2 cups flour (not sifted)
- 1 tsp salt

(Mix by hand with a whisk. A mixer will add too much air)
Preheat oven to 450 with rack in the middle position. Spray a 12-cup muffin pan with Pam. You can also grease with clarified butter if you want.
Whisk eggs until they're light, uniform color but not fluffy (1-2 minutes)
Add milk and whisk until incorporated.
Measure out the flour and dump it into the bowl all at once. Add the salt. Stir for a moment with a wooden spoon until all flour has been moistened (you will have lumps).
Transfer batter to a container with a spout (like a measuring cup). Pour the batter into the muffin cups, filling them almost to the top.
Bake at 450 for 30 minutes. Do not open the door or they'll fall)
After 30 minutes, remove the pan to a cold burner or wire rack and pierce the top of each popover with a sharp knife to let the steam escape.
Let the popovers stand in the pan for a minute and then tip them out into a napkin lined basket.
Serve with sweet butter, salted butter, fruit butters, james, jellies or cream cheese.
